Sindhi Kadhi (Vegetable Gram Flour Curry)

Ingredients:

  • 1/2 cup gram flour (besan)

  • 1 medium potato, diced

  • 1 medium carrot, diced

  • 1/2 cup green beans, chopped

  • 1/2 cup cauliflower florets

  • 1 medium tomato, chopped

  • 2-3 drumsticks (optional)

  • 1 tsp cumin seeds (jeera)

  • 1 tsp mustard seeds (rai)

  • 1/2 tsp fenugreek seeds (methi)

  • 1/2 tsp turmeric powder (haldi)

  • 1 tsp red chili powder

  • Salt to taste

  • 2 tbsp tamarind pulp (imli)

  • 2 tbsp oil

  • Water as required

Instructions:

  1. Heat oil in a deep pan. Add cumin, mustard, and fenugreek seeds. Let them splutter.

  2. Add the gram flour and roast until it turns golden brown and fragrant.

  3. Slowly add water while stirring continuously to avoid lumps. Bring it to a boil.

  4. Add the vegetables, turmeric powder, red chili powder, and salt. Cook until the vegetables are tender.

  5. Add the tamarind pulp and adjust the consistency with water as needed.

  6. Simmer for a few minutes until the flavors combine.

  7. Serve hot with steamed rice.
