Ingredients:
1 cup basmati rice
1/2 cup sugar (adjust to taste)
1/4 cup jaggery (optional)
1/4 tsp cardamom powder (elaichi)
2 tbsp ghee
10-12 raisins (kishmish)
8-10 cashews, chopped
8-10 almonds, sliced
A pinch of saffron strands (optional)
Water for cooking rice
Instructions:
Wash the rice and cook it with enough water until soft. Drain and set aside.
Heat ghee in a pan and add raisins, cashews, and almonds. Fry them until golden brown. Remove and set aside.
In the same pan, add sugar, jaggery, and 1/4 cup water. Stir until they dissolve completely.
Add saffron and cardamom powder, stir well.
Add the cooked rice to the sugar mixture and mix gently, ensuring the rice is coated well with the syrup.
Let it cook on low heat for a few minutes until the rice absorbs the flavors.
Garnish with fried dry fruits and serve hot or at room temperature.
